Korean Chicken Skewers




These Korean Chicken Skewers make for an easy and tasty meal. Delicious marinated chicken is grilled to perfection with a refreshing flavor.

I loved grilled recipes regardless of the temperature, but summer is definitely my favorite time to bust it out. I don’t have to heat up my house and they make for easy, quick and delicious meals on busy summer nights.

I found this recipe over at Closet Cooking and couldn’t wait to try it out. I changed up some of the quantities to my personal preference and my whole family loved it! If you are looking for a fun new flavor to bring to the grill, give these Korean Chicken Skewers a try! It has such a light and fresh flavor to it and it is sure to be a huge hit!

Ingredients
  •     12 wooden skewers, soaked in water for 1 hour
  •     2 pounds of chicken breasts, cut into 1 inch bites
  •     5 garlic cloves, minced
  •     3 Tablespoons grated ginger
  •     ¾ cup onion, finely minced
  •     ½ cup soy sauce
  •     2 Tablespoons sesame oil
  •     3 Tablespoons brown sugar
  •     ¼ cup green onion, chopped
  •     ¾ teaspoon salt
  •     ¼ teaspoon pepper

I can’t even handle the cold temperatures we have been having so far this year. A few days ago, it said -17 degrees F. Yes NEGATIVE 17. It is too cold to even step outside. All we want to do is bunker down in blankets and watch movies or reruns of our favorite shows.

When it gets cold, especially THIS cold, there is nothing I love more than a bowl of soup or one of my favorite comfort foods. This Chicken Pot Pie Soup combines soup with a classic and the end result was delicious. My personal favorite part was the pie crust pieces.

This was a winner all around the dinner table. If you are looking for a new dinner that will quickly soar to a new favorite, give this one a try! It is DELICIOUS!

Ingredients
  • Pie Crust, homemade or store bought
  • ¼ cup butter
  • ½ cup onion, chopped
  • 1 cup carrots, sliced into bite size pieces
  • ⅓ cup flour
  • 2 cups water
  • 3 cups chicken broth
  • ½ teaspooons poultry seasoning
  • 2 teaspoons salt
  • 2 chicken bouillon cubes, crumbled
  • 2 cups rotisserie chicken, chopped into bite size pieces
  • 1 cup frozen peas
  • Pie Crust

Instructions
  1. Cut Pie crust into bite size pieces. Bake according to directions until pieces are golden brown in color. Remove from oven and let cool.
  2. In a large pan melt butter and add onion and carrots. Cook on high for about 4 minutes, then add the flour. Cook for another minute and then add water and chicken broth. Stir until smooth. Add poultry seasoning, salt, bouillon, and chicken. Bring to a boil. Stir in peas and cook 1 more minute. Serve and garnish with pie crust pieces.

Summer flew by. School is in session, but the heat is still here. Which means, I am still outside grilling to keep the heat outside.

I LOVE grill recipes and this one is no exception. This buffalo marinade is phenomenal and packed with a kick! We served this at a family get together and it received such high compliments! It is an addition form the Buffalo Chicken Wings recipe and is absolutely fantastic!

I also love this Grilled Buffalo Chicken because it marinades overnight, make it dinner prep even easier the day of. All you do is throw it on the grill. I reserved a little bit of the sauce before it touched the raw chicken and stored it in an airtight container in the fridge to be able to lather on a little bit extra after it had been grilled and cooked.

This received thumbs up all the way around! Give this a try before you retire the grill for the year ;) You will be happy you did!

Ingredients
  • 6 chicken breasts
  • ½ cup buttermilk
  • 1 cup cayenne pepper sauce
  • ⅓ cup vegetable oil
  • 1 teaspoon sugar
  • ½ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon Worcestershire sauce
  • ⅛ teaspoon coarse ground black pepper

Instructions
  1. Combine cayenne pepper sauce, oil, sugar cayenne pepper, garlic powder, Worcestershire sauce, and pepper in a medium saucepan and simmer for 20 to 30 minutes. Cool for 15 minutes.
  2. Place chicken in a zip lock baggie and add buttermilk. Coat well. Pour in buffalo sauce and mix again. Marinate chicken for it least for hours or overnight.
  3. Heat grill to medium high and grill chicken for 5 minutes per side. Cook until the pink is gone. Time will vary depending on the size of your chicken.
  4. Top with blue cheese crumbles if desired or serve with ranch.

Life has been absolutely CRAZY around here lately. As another school year winds down to a close and summer break is fast approaching, we are feeling the intensity that this time of year brings. Between my kids’ extra ciriculars, this pregnancy, the blog and just life in general, I am finding it difficult to take a breather. That said, I took a wonderful break and went and visited my family this past weekend. I was able to cook with my mom, which is something I always treasure. There is nothing like being in my mom’s kitchen working hand and hand with her.
One of my mom’s favorite bread items are orange rolls. In fact, even the smell will ALWAYS remind me of her. I used to hate orange rolls growing up but over time my taste buds matured and now they are a true treat whenever they make an appearance at the dinner table.
We decided to transform our beloved orange rolls into a fun new recipe. This was the hit of the weekend! Everyone raved about its delicious and refreshing flavor. I personally love that it is made from scratch. We used to use canned biscuit dough from the grocery store for our pull apart breads, but after being spoiled with a homemade dough, it is almost impossible to go back. It brings SO much more to the recipe. This would be a perfect treat or even breakfast for this time of year.

Ingredients
  • 1 Tablespoon yeast
  • ½ cup oil
  • 1 teaspoon salt
  • ⅓ cup sugar
  • 1¼ cups warm milk
  • 2 eggs
  • 2 Tablespoons orange zest
  • ¼ cup orange juice
  • approximately 5 cups flour
Sugar mixture
  • 1 cup sugar
  • 2 Tablespoons orange zest
Additional Dipping
  • 6 Tablespoons melted butter
Glaze
  • 3 Tablespoons orange juice
  • ½ teaspoon vanilla
  • 1½ cups powdered sugar
  • 1 Tablespoon orange zest

Instructions
  1. Stir yeast, warm milk, oil, salt and sugar together and let stand 5 minutes to get the yeast activated.
  2. Mix in remaining ingredients and add as much flour as needed for soft dough. I find it easiest to add 4 cups and add an additional ¼ cup at a time until dough reaches a soft consistency.
  3. Knead 5 minutes.
  4. Cover and let rise until dough has doubled in size.
  5. Mix down.
  6. Spray a bundt pan with cooking spray.
  7. Roll dough into 1 inch balls and then dip into the melted butter and then in the orange sugar mixture.
  8. Place balls in prepared bundt pan. I do not use all the dough for this recipe. Fill bundt pan about half way up. (I usually have enough left over to plop about 4 orange rolls in the oven.)
  9. Cover with a dish cloth and allow to double in size.
  10. Preheat oven to 370 degrees F and bake for about 40 to 50 minutes.
Make the glaze while bread is baking.
  1. Add all glaze ingredients and mix well. Set aside.
Final Steps
  1. Remove from oven and allow to sit for about 3 minutes.
  2. Carefully invert pan and place monkey bread onto serving dish.
  3. Drizzle glaze over the top and enjoy!

For Easter we had our entire family get together for a fabulous dinner. My grandparents were visiting and it was so great to be surrounded by good food and good company. I got the original Broccoli Craisin Salad that is on the blog for her recipes she handed down on me and thought it would be fun to do a flavor switch up for a delicious new twist.
This recipe includes grapes which adds such a crisp and juicy flavor and texture. It is perfect! I also switched out the cashews with almonds. Together, the broccoli, grapes, almonds, bacon and onion provide a divine compilation of ingredients. This was such a hit at our dinner table and I know it will be at yours too!

Ingredients
  • 5½ cups broccoli, cut into bite size peices
  • 2 cups red grapes, sliced in half
  • 10-12 strips bacon, cooked and crumbled
  • ¾ cup sliced almonds
  • 2 Tablespoons red onion, diced
Dressing
  • 1 cup mayonnaise
  • ½ cup sugar
  • 2 tsp. white vinegar
  • 1 tsp. Salad Supreme
Instructions
  1. Mix Broccoli, grapes, bacon, almonds, and onion in a large bowl.
  2. Whisk together the mayonnaise, sugar, white vinegar and Salad Supreme to make the salad dressing.
  3. Pour over broccoli mixture and chill and stir to coat.
  4. Chill salad at least 1 hour before serving.

Dinner time has been a struggle lately at my house. Why you ask? It is because I am SO tired. I tell you what, being pregnant at my age is A LOT different that being pregnant with my first 8 years ago. I am tired. all. the. time. I go to bed at about 10 pm and wake up at 7 or 8 am and most days I actually take a nap. That may be embarrassing to admit but its the truth. I don’t remember being this tired with any of my others. Between caring for 3 busy kids (and one of those three kids being an almost-3-year-old), extra curricular activities, and being halfway done with my pregnancy, I am constantly on my toes. It’s no wonder when I finally get some down time, I sleep.
Maybe now you know why dinner has been s-t-ruggling on my to do list. I need it to be fast, tasty and easy. This meal is not only all of those things, but it was a hit with my whole family!
Let me just tell you about this sauce. I ate it by the spoonful. I’m not even joking. I poured it over anything I thought it could compliment. It totally makes this whole dish and will honestly be one of the best things you ever try!
This meal will definitely be one I will make again and again! Trust me, put this on the must try list. You will be so glad you did!

Ingredients
  • 4 pounds pork tenderloin
  • 1½ teaspoons salt
  • ¾ teaspoon pepper
  • 2 cloves garlic. minced
  • 2 teaspoons sage
Balsamic glaze
  • 1¼ cups brown sugar
  • 2 Tablespoons cornstarch, plus 1 teaspoon cornstarch
  • ½ cup balsamic vinegar
  • 1 cup water
  • 4 Tablespoons soy sauce

Instructions
  1. In a small bowl combine salt, pepper, garlic, and sage to make a paste.
  2. Rub this mixture all over the tenderloin.
  3. In a very large skillet, heat ¼ cup olive oil to medium high heat and place the tenderlion in the skillet. (If my tenderlion is too long, I will cut it in half.)
  4. Brown each side for 2 minutes. (I do four sides, rolling the tenderloin)
  5. Spray the bottom and sides of the slow cooker with vegetable spray and place tenderloin inside.
  6. Cook tenderloin on high for four hours.
An hour before the tenderloin is done cooking make the glaze.
  1. In a small saucepan, combine brown sugar, cornstarch, balsamic vinegar, water and soy sauce. Heat over medium heat for about 4 minutes until sauce thickens.
  2. When the tenderloin is cooked, remove from heat and place on a serving platter.
  3. Slice tenderloin in your desired thickness.
  4. Spoon the glaze over the top. I place the remaining glaze on the table in a serving dish for those who would like extra. (Believe me it is so good, you will want to drown your pork in it.)

Life is getting into a busy mode again. I entered second trimester a few weeks ago and am patiently waiting for my energy to come back. I am still so tired and because of that, dinner needs to be easy.
I am always trying and creating new casseroles for dinner. They are my FAVORITE way to enjoy dinner. They are easy to assemble and everyone loves them!

Ingredients
  • 12 ounces Penne pasta, cooked and drained
  • 3 chicken breasts
  • olive oil
  • 1 red bell pepper, thinly sliced lengthwise
  • 1 yellow pepper, thinly sliced lengthwise
  • 1 orange pepper, thinly sliced lengthwise
  • 1 medium onion, thinly sliced lengthwise
  • 2 cups heavy cream
  • 2 fajita seasoning mixes
  • 1½ mexican cheese blend

Instructions
  1. In a large skillet, heat oil to medium high and add chicken. Sprinkle a portion of the seasoning mix on the chicken to lightly coat the chicken. Cook for 3 minutes. Flip the chicken and then sprinkle more of the seasoning mix over the chicken and cook 3 more minutes.
  2. Turn the heat down to medium low and cover chicken and cook additonal 8 minutes or until chicken is done and completely cooked through.
  3. Remove from skillet and slice chicken in lengthwise strips. Set aside.
  4. Sauté veggies in large skillet in 3 Tablespoons olive oil. Cook for 3 minutes.
  5. Add cream and the remaining seasoning mix from the chicken and also the other package.
  6. Heat oven to 350 degrees F.
  7. Spray 9x13 baking dish with vegetable spray.
  8. Place pasta in baking dish and add veggies with cream.
  9. Stir in 1 cup of the mexican cheese blend.
  10. Place chicken over the top.
  11. Bake at 350 degrees F for 35 minutes.
  12. Add the remaining cheese over the top of the casserole. Return to the oven for 5 more minutes.
  13. Serve.

This winter has been insane. We received several feet of snowfall in a short amount of time and then rain and warmer temperatures came. It is cold and wet and all I like to do on rainy and/0r snowy days is stay inside and watch it from my windows. These days I crave nothing but soup!
This Chicken and Wild Rice Soup recipe comes from my Aunt. Over Christmas Break my entire extended family got together and we had a soup and salad bar. My aunt made this soup and everyone went crazy over it! It was one of the most popular ones there. She so kindly gave me the recipe to share with all of you. Trust me, you are going to want to make this one ASAP!

Ingredients
  • 1 sweet onion, chopped
  • 1½ cups shredded carrots
  • 1½ cups chopped celery
  • 3 Tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 quarts chicken broth
  • 1 box uncle Ben's wild rice
  • 3 cups cooked and chopped chicken breasts
  • 1 cups heavy cream
  • ¼ cup chicken broth + 3 Tablespoons cornstarch

Instructions
  1. In a large pot add onion, carrots, celery and olive oil. Sauté for 3 minutes until tender.
  2. Add salt and pepper.
  3. Add chicken broth and bring to a boil.
  4. Add Uncle Ben's rice and cook until rice is tender.
  5. Add chicken and cook another 3 minutes.
  6. Add cream and cook for another 2 minutes.
  7. To thicken, in a small bowl combine ¼ cup chicken broth to 3 Tablespoons cornstarch. Add to pot and cook another 3 minutes.
